Introduction
Potassium sorbate is potassium salt of Sorbic acid. It is white salt and is very soluble in water. It has antimicrobial activity and commonly used as preservative in food and drinks to prevent the growth of Mold, Yeast and Fungi. It lowers the pH of the food preventing microbial growth.
Application
