Introduction
Calcium propionate is an acid-type food preservative used in different types of foods. It is an organic salt formed by the reaction of calcium hydroxide with propionic acid. It is commonly used to in processed foods to prevent the microbial growth. The use of calcium propionate is affirmed as GRAS by FDA.
Application
It is commonly used in bread due to its no effect on fermentation of dough.
It is reportedly used in the processed meat, milk products, confectionaries, processed fruits, breakfast cereals, beverages, and wine.
It is used as mold inhibitor in animal feeds.
